Mediterranean Salad

I try to consume less meat, and my favourite way to achieve this is by making colourful salads! This vegan salad incorporates many Mediterranean flavours.

5 minutes to make. Serves 1.

Ingredients:

  • 1 cup baby spinach

  • a handful of cherry tomatoes

  • 1/4 avocado

  • a few olives

  • some diced piquanté peppers

  • A generous splash of balsamic vinegar
