Keto Coconut Protein Balls
These no-bake protein balls are easy to make, delicious and crunchy. They are wheat free, gluten free and egg free.
15 minutes to prep. Serves 8.
2 tbsp coconut oil
2 tbsp maple syrup (or other sweetener)
1 cup nut butter
1 cup shredded coconut
2 tbsp cocoa powder
2 scoops protein powder
Melt the butter or oil with the nut butter and sweetener.
Set a little bit of coconut aside for the coating.
Add the rest of the coconut, cocoa and protein powder to the melted mixture and mix well,
Line a tray with foil.
Form little balls of the mixture and roll them in the coconut to coat them before placing them on the lined tray.
Place in the freezer for 1 hour before serving.
Store in the fridge (else they can become very sticky)
