Vegan Chocolate Mousse
This is a high fibre, high protein, healthy, smooth vegan pudding. Each portion has 12-13g of fibre and 8-9g of protein.
You can use a crunchy nut butter if you like a bit of crunch in your dessert. You're also welcome to substitute the water with a milk of your choosing for extra creaminess and more protein.
For added protein, chocolate protein powder can be used instead of cocoa powder.
5 minutes to make. Serves 2.
1 ripe avocado
2 ripe bananas
2 tbsp cocoa powder
3 tbsp maple syrup (or other sweetener)
2 tbsp peanut butter (or other nut or seed butter)
1/4 cup water
Optional: pinch of cinnamon and/or ginger
Set one banana aside for the topping.
Place all the other ingredients in a blender and blend until smooth.
Pour into dessert bowls and top with sliced banana pieces, or any other fruit or nuts.
