Amarula Banana Bread

Love banana bread? Love Amarula? Why not mix the two together?

Add some Amarula to your coffee while you're at it!


If you don't have Amarula you can substitute another creamy liqueur like Baileys, Cape Velvet etc.

1 hour to make.

Ingredients:

  • 5 medium over ripe bananas, peeled and mashed

  • 1 tbsp vanilla essence

  • 2 tbsp maple syrup, honey or other sweetener

  • 1/3 cup oil

  • 1 cup almond flour

  • 1 cup coconut flour

  • 1 tbsp ground flaxseed

  • 1 tbsp psyllium husk

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 1/3 cup Amarula (replace with your choice of milk if you like)

Directions:

  1. Preheat the oven to 170°C.

  2. Mix the ground flax seed and psyllium husk with 100ml warm water and let it rest to thicken.

  3. Place all the dry ingredients in a bowl and mix.

  4. Add all the other ingredients, including the flax mixture and mix well.

  5. Butter a 9x5" loaf tin and pour the mixture into the tin.

  6. Bake for 40-45 minutes.

  7. Without opening the oven, switch the oven off and let the loaf rest inside for another 10mins before taking it out.

  8. Leave in the tin on a rack to cool before serving.
