Biltong Salad


I'm a big fan of biltong and a huge salad lover, but when you eat salad too often you can easily get bored of it. Therefore I try to add new interesting ingredients every once in a while, like celery leaves and raw mushrooms! Adding lots of different colours to your salad will also make it more appealing.

This salad contains 7.4g fibre, 27.7g protein, 14.8g fat and 12.7g nett carbs.

5 minutes to make. Serves 1.

Ingredients:

  • 50g lean biltong

  • 1 cup celery leaves

  • 1 cup cucumber, sliced

  • 1/4 an avocado

  • 1/2 cup mushrooms, sliced

  • 1 tomato, cut into slices

  • 1 stalk spring onion, chopped

  • 1/4 sweet pepper

  • 1/4 of a round feta cheese

  • Optional: A generous splash of soy sauce or balsamic vinegar
