Keto Cheesy Spinach with Bacon and Feta


This healthy recipe uses yoghurt and cheese for a deliciously creamy base instead of the usual butter and flour based white sauce. It provides a healthy dose of fibre, protein and calcium. This recipe can be made on the stove or in the microwave

30 mins to make. Serves 2.

Ingredients:

  • 1 medium onion, diced

  • 125g of bacon

  • 2 big handfuls of spinach (to make 2 cups of cooked spinach)

  • 100g grated cheese

  • 200ml Greek yoghurt

  • Feta

Other herbs and spices: Garlic, ground coriander and Parsley. Salt and pepper.

Directions:

  1. Cook the onion and garlic in a tiny bit of butter until they start to become translucent.

  2. Add the bacon and cook until cooked through.

  3. Add the spinach and cook until they start to wilt.

  4. Add the yoghurt and cheese and cook for another 2 minutes, stirring occasionally.

  5. Add salt and pepper and other spices to taste.

  6. Remove from the heat, and serve with crumbed feta on top.
