Keto Zucchini Bacon Mushroom Warm Salad


This is a light dish with a bit of a bite and it provides a healthy dose of fibre and protein.

30 mins to make. Serves 2.

Ingredients:

  • 1 tbsp butter or olive oil for frying

  • 1 large onion, diced

  • 125g bacon, diced

  • 150g zucchini, sliced

  • 150g mushrooms, sliced

  • a few picante peppers, diced

Other herbs and spices: Garlic, Italian Herbs, Salt and Pepper

Directions:

  1. In a large pan, fry the onion and garlic in the butter or olive oil until it becomes translucent.

  2. Add the bacon and fry until cooked through.

  3. Add the zucchini, mushrooms, picante peppers, herbs, salt and pepper and cook until the vegetables are cooked through.
