Meaty Hash Brown Casserole


This is the hash brown lover's greatest treat. The creamy cheesiness combined with the meaty flavours make this a great family casserole.

1 h 15 mins to make. Serves 4-6.

Ingredients:

  • 5 medium potatoes, grated

  • 4 chicken breasts, cooked and shredded (400g)

  • 1 spicy smoked sausage (like chorizo), sliced

  • 1 oil for frying

  • 1 sachet of brown onion soup

  • 2 cups cheese sauce

  • 2 cups grated cheese

Other herbs and spices: Garlic, Parsley, Cayenne pepper, to your taste

Directions:

  1. Preheat oven to 180°C.

  2. Lightly spray a 25×25 cm pan with cooking spray. Set aside.

  3. In a large skillet, cook smoked sausage in a little bit of oil over medium-high heat for 5 to 8 minutes, until the sausage is almost crispy.

  4. In a large bowl, combine cooked chicken, smoked sausage, onion soup, cheese sauce, cayenne pepper, garlic, parsley, cheese and grated potato.

  5. Scoop into the prepared pan and bake for 1 hour.
