Banana Coconut Porridge

This is a very oatmeal-like porridge. No extra sweetener is needed for this breakfast dish.

Any fruity or nutty garnish will work well with this dish.

5 minutes to make. Serves 2.

Ingredients:

  • 3 bananas

  • 1/2 cup milk of your choosing

  • 1 tsp vanilla extract

  • 1/2 cup desiccated coconut

  • a pinch of salt

Directions

  1. Cut the one banana into slices and set aside for the garnish.

  2. Cut the other two bananas into chunks and place in a bowl with the milk, coconut, vanilla extract and a pinch of salt.

  3. Microwave on high for 2 minutes.

  4. Take the bowl out, smash the banana chunks with a fork and stir to combine the banana and coconut mixture well.

  5. Microwave for another minute.

  6. Serve with sliced banana pieces on top.
