Banana Coconut Porridge
This is a very oatmeal-like porridge. No extra sweetener is needed for this breakfast dish.
Any fruity or nutty garnish will work well with this dish.
5 minutes to make. Serves 2.
1/2 cup milk of your choosing
1 tsp vanilla extract
1/2 cup desiccated coconut
a pinch of salt
Cut the one banana into slices and set aside for the garnish.
Cut the other two bananas into chunks and place in a bowl with the milk, coconut, vanilla extract and a pinch of salt.
Microwave on high for 2 minutes.
Take the bowl out, smash the banana chunks with a fork and stir to combine the banana and coconut mixture well.
Microwave for another minute.
Serve with sliced banana pieces on top.
