Creamy Mushroom Zoodles
By grating zucchini into pasta like strips, we create a dish similar to pasta, but without the carbs. This dish is wheat free, egg free and gluten free.
20 mins to make. Serves 3-4.
1 tbsp butter
1/2 large onion, diced
200g Greek yoghurt
400g zucchini, sliced or grated
250g mushrooms, sliced
half a round of feta
Other herbs and spices: Garlic, Italian Herbs, Salt and Pepper
In a large pot, fry the onion and garlic in the butter until it becomes translucent.
Add the mushroom and spices and fry until cooked through.
Add the yoghurt and let simmer for 2 minutes.
Add the zucchini, and cook until al dente.
Serve immediately and top with crumbed feta
